McDonald's French Fries Recipe
(Inspired from McDonald's)
Notes
- If doubling the quantity don't double the quantity of oil, instead cook in batches.
- Don't add too many fries for blanching at one go.
Ingredients Required
- Peel and wash the potatoes.
- Slice the potatoes in halves.
- Chop the potatoes in about ¼ to ⅓ thin strips. Make vertical cuts of uniform thickness.
- Soak the potato slices in ice cold water for about an hour in order to remove starch.
- Drain it out and rinse it about 1-2 times with cold water for better results.
- With the help of tissues wipe off the remaining starch and let it dry.
- While your potato strips are drying, get your oil ready for blanching, which is to be done in a heavy bottom pot.
- Fill the pot halfway with oil and heat it up to medium hot, i.e. upto 150°C approx.
- Now you can begin with blanching your fries.
- Cook it for around 3 minutes and do drain out the oil completely.
- Cool it down completely over a wired rack or a perforated tray.
- Heat up the oil to about 175°C approx. which was used for blanching previously.
- Gently put the fries into the hot oil and cook it until it turns golden light brown.
- Drain out the excess oil using a colander/strainer.
- Transfer the fries to a large bowl, sprinkle a pinch of salt or seasonings onto it and further give them a toss.
- Do the plating as per your choice and serve them with some dips.
